Sun dried Tomato Quinoa & Asparagus – Protein

I ran into Kade at the grocery store the other day and ask him what was his quick go to dish, he said he had many but told me to grab quinoa, sun dried tomatoes, garlic, shallots and whatever herbs and spice I was feel’n.  So I grabbed some sun dried tomatoes and the rest I had at home.  He said to just sauté everything but the quinoa together until it caramelizes then add the quinoa and let that mix a little, coating it with all the flavours.  It smelt so amazing, I used thyme, it’s my favourite herb and I love it combined with any tomato type dish.  Then just added the water, cover the pot and let it cook on med heat until the quinoa was fluffy.

I sauteed up some asparagus to accompany it and that’s it, dinner was served.  Under 20 minutes; this meal was prepped, cooked and it was so delicious, CK loved it too and it kept us full for hours.  Yes, a super easy meal that anyone can make but just being thrown an idea really helps sometimes. lol

I think it’s important to keep recipes easy sometimes and it’s comforting to know you have a quick go to meal on hand.  You can get creative with the ingredients when working with Quinoa, really add anything sweet or savoury to it.  I love the texture of it, I crave it and knowing its packed with protein is definitely a bonus.

It’s a very light dish, it won’t bloat you and it’s packed with protein, I recommend you try it. Add a piece of fish or chicken to the plate if you want a bigger meal and your all set.

Ingredient list:

  • 1 Cup Quinoa
  • 3/4 cup Sun dried tomatoes
  • 2 shallots
  • 4 cloves of garlic
  • 3-5 sprigs of thyme
  • 1 Tbs Coconut oil
  • 1 tsp Cayenne
  • 1.5 tsp Sea salt
  • 1.5 tsp Cumin

*** Don’t forget to soak your sun dried tomatoes in a little water for a few minutes before you use them, just plum them up a little!!!
