Shepard’s Pie – Soy Beans

I know Ive been on this bean kick lately, but I will be honest with you, until recently I didn’t cook with it much, I wasn’t even a huge fan.   Well now the tables have turned, 4-5 months meat free, the girl needs some alternatives.  Can’t be lifting heavy at the gym and expect any results.  So as I explore into the bean, lentils, chickpeas, Quinoa ,etc world I thought I would share my fav’s with you.  I try to keep my recipes simple, I’m a busy gal and I want to be practical, efficient and get the most nutrients that my  gym rat body needs!

Today I made this pretty Healthy Shepard’s Pie.   It was AMAZING.  CK loved it, he had two servings and was excited about the leftovers, so bonus points for me! haha

So I just sautéed some beans with shallots, garlic, leek ..add a little spices, splash of vegetable stock.. really whatever you want to add in there. Beans are so versitile, I LOVE it, they soak up so much flavour and the protein packed in them is pure.  That’s what scares me about meat.. it’s not even that they are these cute cows..pigs whatever. It’s how the whole system works now, it scares me and I don’t trust it, plain and simple. SO the protein in my beans and all the other benefits in these legumes for now have sold me.  This no meat kick im on could be just a faze.. who knows!  So for now I am embracing it and learning new recipes.

Then you just layer it in your cook-wear,  the beans, corn and potatoes.  I used a mix of regular and sweet potatoes.  You could add another layer if you want.. there’s no rules with Shepard’s Pie. lol make it your own and throw it in the oven and enjoy.

I will tell you that I wasn’t sure how I was going to like this, but it was so good.  Just make sure you cook your beans moist. That will make or break this recipe.

  • Soy Bean Mix (any bean) approx 10-18 grams of Protein per Cup
  • Corn kernels
  • Sliced Mushrooms (or whatever you want really)
  • Sweet & regular potatoes mashed

Cook potatoes and then mash them.  I added some nutmeg, pepper & sea salt.

While potatoes are boiling sauté your bean mix up, open the can of corn and pre-heat your oven.

Layer it with the potatoes on top then Bake it at 35o for 20-25 minutes or so, EVERY oven is different.
