Healthy Cookie Recipe – Gluten Free, High Protein, No Sugar

If you are looking for a high protein, high antioxidant, no sugar added, super yummy treat then look no further than the receipe below.  However, beware once you have one it is hard not to have another!

I call these “Proactive Cookies”.  They contain ingredients that can help lower cholesterol, help with sleeping (tryptophan), increase immunity, reduce inflammation, are high in fiber – need I say more?  They are nut free (so a great snack for the kids to take to school).  I will also let you know how to make them gluten free and even vegan.  They are super easy to make, which is why I like them so much.  They will be ready to bake when the beeper chimes that the oven has reached 325 degrees.

HOW TO MAKE

In a large bowl mix together:

  • ½ jar of Sunflower butter (jar is 454g)
  • 2 eggs
  • 1 snack size (100ml) package of unsweetened applesauce

FOR ADDED MOISTURE: add ½ of a ripe banana to this mixture (if you don’t like bananas – it is not necessary)

Once this is blended add (in no particular order)

  • ¾ cup of rolled oats
  • 1 cup of Cheerios
  • 1 cup of Rice Krispies
  • Handful of Pumpkin Seeds
  • Handful of Sunflower Seeds
  • 4 tbsp of Flax Seeds
  • ½ cup of Dried Cranberries
  • 5 tbsp of Unsweetened coconut
  • 2 tbsp of Cinnamon
  • ½ a package of Dark Chocolate Chips 

AND MIX!

GLUTEN FREE RECIPE: substitute extra granola or Rice Krispies for Cheerios

VEGAN RECIPE:  substitute whole ground flaxseed meal for eggs (I double what is receommended per egg substitute i.e. used 4 tbsp of flax and 12 tbsp of water) and vegan chocolate chips for dark chocolate chips

You can roll them into balls OR the easy way:  place parchment paper on a cookie sheet and simply dump the entire bowl onto the paper and spread over the sheet.  Bake in the oven for 20 minutes.  Let it cool and simply break into pieces – SO EASY
