Healthy Breakfast Bar Recipe – Goji Berries & High Protein

 

These bars are absolutely amazing, we made them a few times to perfect our recipe. They are pretty much fool proof and  you can get creative and add or take away any nut/seed or fruit to this recipe if you want.   Just keep the main ingredients the same.

I calculated out and there is about 89.4 grams of Protein per batch .  I cut 8 decent size bars out so thats 11.2 grams of protein per bar. That’s awesome and way healthier then a store bought bar thats full of crap.

It’s so easy to cook healthy right at home, these took me minutes to prep and then only 15-20 minutes in the oven and all the ingredients were under $30 and I have enough to make about 5-6 batches. That’s less then a $1 a bar.

Our Healthy Breakfast Bars Recipe

Dry Ingredients:

  • 1 cup Rolled Oats
  • 1 cup Millet Puffs (Bulk store & optional)
  • 1 cup Buckwheat Flour
  • 3/4 cup Organic Protein Powder
  • 1 tsp. Baking Soda
  • 1.5 Tbs. Cinnamon
  • 3/4 cup Sesame seeds
  • 2/3 cup Sunflower seeds

Wet Ingredients:

  • 2 med. Mashed banana’s
  • 2 Tbs. Coconut
  • 1 Tbs. Vanilla
  • 3/4 Cup Goji Berries
  • 2.5 Tbs. Coconut Oil
  • 1/4 cup Agave Nectar
  • 2 eggs whites

*** Once all mixed together you can add dark chocolate if you want or any other dried fruit. 

  • Amaranth Seeds (to Sprinkle on top, once in pan)

 

 

Healthy Breakfast Bars - Goji & protein

– Mix dry ingredients together

– Mix wet ingredients together

– Mix them both together then add your dried fruit or chocolate (cocoa nibs), if you decide to add in.

– Press into parchment paper lined baking pan and then take another piece of parchment to press the dough down tightly

– Sprinkle Amaranth Seeds generously over the top

– Bake in oven for 15-20 minutes at 350 degrees.

– Let the bars cool completely before removing and cutting.

That’s it, very simple to make and so delicious.  Your kids will love them too.  If you double or triple the recipe you are all set with breakfast bars for a while and they hold great in the freezer !!!
