Morning Buckwheat / Pumpkin Porridge [RECIPE]

Buckwheat is a hearty grain with loads of nutrients and relatively alkaline forming after digestion. Has a complete amino acid profile for another protein source.  This recipe is loaded with EFA’s, minerals, phytonutrients (inparticular beta carotene from pumpkin), vitamins and loads of protein. this recipe can be used with any grain, my fav is buckwheat but millet is a close second 🙂

1/2 cup buckwheat (soaked 8-10 hours or overnight)

1/2 cup water sometimes a little more water depending on soak time… less soaking more water. Learning process like anything.

2 heaping tbsp of pure pumpkin puree – if you can find; sweetpotato or buternut squash puree works as well… good to rotate

1/4 cup pumpkin seeds (soaked overnight) – for rotation sunflower is good

1/4 cup almonds (soaked overnight) – rotating in brazil, macadamia, hazelnut, cashew, peanut, walnut is beneficial

1/4 tsp nutmeg

1/2 tsp cinnamon

1/8 tsp sea salt

1-2 tbsp honey, agave, coconut nectar or sweetener of choice…

2 tbsp ground flax seed – as well chia or sesame can be used

1 tsp blackstrap molasses drizzled on top.

Rinse soaked grain, nut and seeds. Bring water to boil add buckwheat, sea salt and then reduce heat to min. Just before water is absorbed add nutmeg, cinnamon and sweetener. Keep covered till water is absorbed, then add pumpkin stir thoroughly. Add ground flax and you will have to add some more water or nut milk of choice to properly blend in fiber. Then add remaining nuts and seeds. Now you can leave the almonds whole but i like to crush them up before.  Depending on appetite this may make 1-3 servings.  Keeps well in air tight container 5-7 days refrigerated.
