Healthy Potato Skins Recipe – Sweet Potatoes

These were AWESOME!!!  Everyone loves the thought of Potato Skins but the way they make them at most restaurants are deep fried and stuffed with fatty items.  So After coming home from a restaurant last week CK and I thought we should attempt at some healthier Potato Skins. Pretty simple just used sweet potatoes and then some quinoa and veggies to fill them.  We used some old cheddar but you can go without if you want of course.

Healthy Potato Skins Recipe:

  • Quinoa 
  • Sweet Potatoes
  • Red peppers
  • Broccoli
  • Swiss Chard
  • Aged white cheddar

Healthy Potato Skins

Bake Sweet potatoes in the oven on parchment paper at 350 for 25 minutes or until tender to squeeze.

Romve to let cool a little before cutting them in half and with a spoon scoop out some of the middle

Broil them in the oven at 400 to crisp them up a bit before stuffing them.  Keep an eye on them this will work fast and you dont want to burn the little suckers.

Stuff them with the quinoa and veggies then sprinkle some cheddar on top and let bake in oven for a few minutes.

That’s it, place them on a plate we used Greek Yogurt as a dipping for them and they were amazing.
