Cilantro Lime Salad [Recipe]

I LOVE THIS SALAD!!!

I make this Cilantro Lime salad almost every week and keep it in the fridge to add to EVERYTHING! lol. You can have this salad mix cold with just about any meal. You can do like CK and I, and  roll them into Burritos with some wild rice, peppers, avocado or spinach.

Really, whatever you have in your fridge that would mesh well, go for it! Sometimes we just like it simple. Rice, beans and a little aged cheddar, salsa to top it off. YUMMM!

So, as far as mixing this salad up goes, it’s super easy. Take all the ingredients listed on the picture below, add or take out whatever  your vibe’n and toss them in a bowl and squeeze some limes (depending on the size of salad your making).

Add a little sea salt and ground black pepper to taste and that’s it. Pretty easy right? No reason to buy those pre-packaged containers at the grocery store full of sodium AND your not getting the BANG for your BUCK either.

What else can you add this mix too:
  • add to any green leaf tossed salad
  • roll up in crepes
  • turn into salsa
  • in a salad wrap
  • grill some chicken or salmon and serve over top
  • add a few handfuls to a stir-fry
  • a great filling for spring rolls
  • add to soup
  • heat up and serve over rice

I love versatile meals like this that are efficient  for the whole week and full of protein and nutrients.
